Course Content

Candidates that are registered in food handling and food safety certification courses will learn a variety of different skills and knowledge pertaining to food safety for preparation, storing, receiving food and maintaining a sanitized and hygienic environment. All of the major infectious environments and sources as well as chemical poisoning and allergic reactions are highly preventable and managed with a few key concepts and procedures. Even though each province has its own regulations and standards all provinces essentially offer courses with almost exactly the same course content. All of the 8 hour basic food safety and food handling certification courses cover the same topics.

Food Safety Certification

The following is a list and description of the course content of food safe or food handling certification course:

  • Basic Microbiology – Candidates will receive a basic introduction to food microbiology.
  • Food Borne Illnesses – Candidates will learn about the common food borne illnesses, how they are caused and methods of prevention.
  • Health and Hygiene – Candidates will learn about good personal hygiene practises and good health.
  • Serving and Dispensing Food – Candidates will learn about proper techniques to serving and displaying food.
  • Food Protection – Candidates will learn about methods of safe food preparation and handling.
  • Receiving and Storage – Candidates will learn about safe factors and methods involved in receiving and storing food.
  • Cleaning and Sanitizing – Candidates will learn about correct dish washing facilities, techniques, approved sanitizers and proper storage methods of utensils and dish ware.

Register for Food Safety Certification Course

Candidates registered in two day (16 hour) courses will learn additional and more comprehensive material than the basic 8 hour courses. Candidates will have to complete a multiple choice test test at the end of the course. Course test includes approximately 55 multiple choice questions. Candidates must receive a minimum grade of 70% to successfully pass the course. Candidates are allowed to re-take only the test at a small additional fee.
